Resep Urip-urip Gulung Mangut ala @KratonWedding yang konon adalah kegemaran Sultan Hamengku Buwono VII.. Beberapa hari lalu saya coba bikin dan rasanya enak POL!

Lele gulung:

• Lele (kemarin saya coba dg 10 lele yg kecil-kecil)
• Kunyit untuk melumuri
• Tusuk gigi atau lidi halus utk mengikat

Bumbu untuk dihaluskan:

• 3 butir kemiri
• 2 cm kunyit
• 2 cm kencur
• 2 buah cabe merah besar
• 5 siung bawang merah
• 3 siung bawang putih
• 1 sdt gula
• garam secukupnya

Bahan lain:

• Santan (tergantung mau seberapa kental)
• Belimbing wuluh atau tomat hijau dipotong-potong (asamnya sesuai selera)
• Daun salam
• Daun jeruk
• Petai (sesuai selera)
• Garam dan lada secukupnya (kalau rasa sudah pas ngga usah)
• Potongan cabe rawit (sesuai selera)
• Daun kemangi (saat disajikan)

Cara memasaknya:

1. Fillet lele masih dengan kulitnya, dilumuri dengan kunyit (sedikit aja) dan digulung seperti rolade (pakai tusuk gigi atau diikat pakai lidi halus biar ngga copot). Tapi kalau susah utk menggulung fillet lele sebenarnya lele dipotong2 saja jadi 3 bagian juga enak :)
2. Gulungan lele dibakar di atas bara api (atau panggangan saja jg bisa)
3. Bumbu yang sudah dihaluskan ditumis sampai harum
4. Masukkan bahan-bahan lain seperti santan, belimbing wuluh / tomat hijau, petai, daun salam, dan daun jeruk (kemarin saya tambah potongan cabe rawit karena suka pedas)
5. Masukkan gulungan lele yang sudah di bakar ke dalam tumisan bumbu
6. Kalau sudah matang, siap disajikan dan tambahan taburan daun kemangi di atasnya is a must!! :D

Tips: Kalau saya enaknya makan cuma dengan nasi hangat saja :)
